Guilt-Free; Gluten-Free

Ingredients:

  1. Nonstick cooking spray
  2. 1 10 or 12-ounce package microwave riced cauliflower
  3. 1 large egg, lightly beaten
  4. 1 ¼ cups shredded part-skim mozzarella cheese
  5. 2 tablespoons grated parmesan cheese
  6. Salt and Pepper
  7. ¼ cup tomato sauce or sugar-free pasta sauce
  8. 2 cloves garlic, sliced
  9. ¼ teaspoon crushed red pepper flakes
  10. 10.Your choice of protein: i.e., Reduced fat turkey pepperoni; 4 -8 ounces extra lean ground beef (browned), etc.
  11. 11.Variety of your favorite toppings:  sliced grape tomatoes, thin bell pepper strips, fresh mushrooms, etc.

Directions:

  1. Line a rimmed baking sheet with parchment paper, and preheat oven to 425 degreesF.
  2. Steam the bag of cauliflower per package directions. Put paper towels in the bottom of a colander and a paper towel or two on top and press out as much moisture as possible.
  3. Put cauliflower in a bowl and mix in the egg, one cup mozzarella, parmesan cheese, and salt and pepper.  Once combined, pat into a 10-inch round on the baking sheet with parchment paper and sprayed with cooking spray. Bake for 10 to 15 minutes, or until golden.
  4. Remove from oven and top with ¼ cup sauce, ¼ cup mozzarella,  garlic, red pepper flakes, meat, mushrooms, bell pepper, etc.
  5. Bake in the oven until cheese is melted and bubbly, about 10 minutes.
