Cauliflower Rice Pudding

1 Pkg Cauliflower Frozen riced cauliflower (or two cups cooked brown rice)

1 cup almond milk

1 tablespoon cinnamon

2 teaspoons stevia or a few stevia drops

1 teaspoon vanilla

1 scoop vanilla protein powder

Combine cauliflower and milk in a sauce pan and simmer on medium heat for about 7-10 minutes.

Add cinnamon, stevia, vanilla, and protein powder and mix continuously over low heat for about 10-12 minutes allowing the pudding to thicken until desired consistency.

Serve warm or place in the refrigerator for 3-4 hours to cool.

Per 6 ounces serving using the cauliflower:

40 calories; 0 fat; 1 gram sugar; 2 grams carbs; 5 grams protein
